Characteristics of Gastronomy Establishments Network in Central Bohemian Region ( district of Mladá Boleslav, villages and towns from B-CH)

Abstract:

Cílem této práce je zmapovat a charakterizovat síť gastronomických provozoven ve Středočeském kraji, na území okresu Mladá Boleslav, konkrétně v městech a obcích od B do CH, dále vyhodnotit získaná data, vzájemně je porovnat a stanovit doporučení. Na základě osobního šetření byly zjišťovány informace o gastronomických zařízeních, nacházející se ve zkoumané lokalitě, podle předem stanovených kritérií. Tyto údaje byly vyhodnoceny pomocí grafů a poté použity ke stanovení návrhů a doporučení. Většina podniků je vyvařující, jedná se především o restaurace a rychlé občerstvení. Jejich nabídka se skládá z tučných a nezdravých pokrmů, zejména nevhodných pro dětské strávníky. Dále jsem zjistil, že kouření je povoleno v téměř polovině navštívených podniků. Vlastní internetové stránky nemá zřízeno 71% provozoven. Dětské koutky nalezneme úplně minimálně pouze v 9 % podniků. Žádný z podniků není členem Asociace hotelů a restaurací České republiky ani není zapojen do projektu Czech Specials.

Abstract:

The goal of this dissertation is to map and characterize the network of catering establishments in the Central Bohemian Region, in the district of Mladá Boleslav, particularly in the towns and villages from B to CH, furthermore to evaluate collected data, compare them and determine recommendation. Obtained information about dining facilities located in the mentioned area is based on a personal survey and pre-determined criteria. These data were evaluated in graphs and then used to determine my suggestions and recommendations. Most companies cook food as restaurants and fast food outlets do. Their menu consists of fat and unhealthy dishes, particularly not suitable for children diners. I also found that smoking is allowed in almost half of the visited companies. 71% of the surveyed establishments do not have their websites. Children's areas were found only in 9% of companies. None of the companies is a member of the Association of Hotels and Restaurants of the Czech Republic nor are they involved in the project of so called Czech Specials.
