Determination of the content of fat-soluble vitamins in meat products produced from the meat of pigs fed a diet enriched with fish oil

Abstract:

Cílem diplomové práce bylo stanovit obsah lipofilních vitaminů v masných výrobcích. Byly použity vzorky boloňského salámu a vídeňských párků, vyrobené z šesti prasat krmených standardní krmnou dávkou s přídavkem rybího oleje (P) a z šesti prasat kontrolní skupiny (K). Vzorky byly lyofilizovány, byla provedena extrakce, chromatografická separace, detekce a kvantifikace lipofilních vitaminů. Po vyhodnocení byl zjištěn vyšší obsah vitaminu A ve vzorcích pokusné skupiny boloňského salámu (p > 0,05) a nižší obsah vitaminu A ve vzorcích pokusné skupiny vídeňských párků(p > 0,05) ve srovnání s kontrolními skupinami masných výrobků. Ostatní lipofilní vitaminy byly detekovány pouze ojediněle. Lze tedy konstatovat, že nebyla prokázána statisticky významná rozdílnost v obsahu vitaminů mezi kontrolními a pokusnými skupinami masných výrobků.

Abstract:

The aim of the thesis was to determine the content of fat-soluble vitamins in meat products. Bologna-type salami and Vienna sausages produced from the meat of six pigs fed with a standard feed enriched with fish oil (F) and six pigs fed with a standard feed (control, C) were used. The samples were lyophilized and extraction, chromatographic separation, detection and quantification of fat-soluble vitamins were performed. After evaluation, a higher vitamin A content was found in samples of the Bologna-type salami focus group (p > 0.05) and lower vitamin A content in samples of the Vienna sausages focus group(p > 0.05) compared to control groups of meat products. Other fat-soluble vitamins were detected only sporadically. Therefore it can be concluded that there has been no statistically significant difference between control and focus meat product groups.
