Biogenic amines in wine

Abstract:

Diplomová práce je zaměřená na stanovení obsahu biogenních aminů pomoci aminokyselinového analyzátoru, který pracuje na principu iontoměničové chromatografie. Teoretická část práce se zabývá problematikou technologie výroby vína, světové produkce vína, chemického složení, charakteristikou biogenních aminů a jejích přítomností ve víně, tvorbou biogenních aminů během jablečno-mlečného a alkoholového kvašení. Dále teoretická část diplomové práce popisuje metody, kterými se biogenní aminy stanovují. Experimentální část diplomové práce je zaměřena na analýzu koncentrace histaminu, tyraminu, putrescinu, sperminu, spermidinu a kadaverinu ve 20 vzorcích červených, bílých, růžových a ovocných vín.

Abstract:

This thesis focuses on the determination of the content of biogenic amines using an amino acid analyzer, which works on the principle of ion exchange chromatography. The theoretical part describes the technology of wine production, world wine production, chemical composition of wine, characteristic of biogenic amines and its presence in wine, the formation of biogenic amines during malolactic and alcoholic fermentation. Furthermore, the theoretical part of the thesis is focused on the methods by which biogenic amines are determined and on the toxicity of biogenic amines. The experimental part of this thesis is focused on the concentration of histamine, tyramine, putrescine, spermine, spermidine and cadaverine in 20 samples of red, white, rosé and fruit wines determination.
