Čokoláda jako základ moderní cukrařiny

Chocolate as the basis of modern confectionery
Abstract:
Cílem této bakalářské práce je přiblížení a seznámení se nejen s historií čokolády, s plodinou, která nám dává hlavní surovinu pro výrobu čokolády, ale také s její nelehkou výrobou. Dalším cílem bylo se seznámit s hlavními druhy čokolády, s jejím složením a hlavním využitím čokolády v cukrařině.
Abstract:
The main purpose of this bachelor thesis is to describe history and production of chocolate, and to introduce cocoa beans as the basis of the chocolate. Other parts of the thesis are focused on basic kinds of chocolate, ingredients and the main utility in the confectionery.
