Cílem práce je na základě komparace tradičních a současných metod vyhodnotit a zdůvodnit význam a vhodnost jednotlivých technologií využívaných při zpracování surovin k přípravě pokrmů. By means of comparison of traditional and up-to-date methods, the paper focuses on appraising and rationalizing of the importance and suitability of particular technologies used in food-processing. On the grand of amassed data we aim to recommend the most suitable products and less suitable ones, for conveniences.
