Bakalárska práca sa zaoberá kávovou usadeninou a postojmi prevádzkovateľov kaviarní k využitiu kávovej usadeniny. Cieľom práce je zistiť, aký je potenciál využitia kávovej usadeniny, taktiež aké sú postoje prevádzkovateľov kaviarní k jej triedeniu/využitiu a analyzovať možné rozdiely vo vnímaní kávovej usadeniny prevádzkovateľmi kaviarní na Slovensku a v Českej republike.
