Fermented dairy products in adult nutrition

Abstract:

V teoretické části této bakalářské práce je podrobně popsáno složení mléka a kysaných mléčných výrobků, zaměřující se na nutriční hodnotu. Popis obsahu bílkovin, tuků, sacharidů, vitamínů a minerálů v mléce ukazuje jejich význam v kontextu stravování. Další část práce se zabývá popisem procesu výroby kysaných mléčných výrobků a zdůrazňuje důležitost bakterií mléčného kvašení při jejich výrobě. Charakterizuje procesy výroby mléčných produktů, jako jsou kefír, jogurty, sýry, a podmáslí, včetně technologických postupů a metod používaných při jejich výrobě. Dále se v této části zaměřuje na zdravotní benefity kysaných mléčných výrobků a analyzuje významné zdravotní aspekty probiotik, prebiotik, postbiotik a synbiotik. V praktické části bakalářské práce jsou analyzovány hypotézy týkající se popularity kysaných mléčných výrobků, s důrazem na jogurty. Dále se zkoumají rozdíly v konzumaci mezi ženami a muži, vliv cenové dostupnosti na jejich spotřebu a přínosy zvýšené konzumace pro zdraví.

Abstract:

In the theoretical part of this bachelor thesis, the composition of milk and fermented milk products is described in detail, focusing on the nutritional value. A description of the protein, fat, carbohydrate, vitamin and mineral content of milk shows their importance in the context of diet. The next part of the thesis describes the production process of fermented dairy products and higlights the importance of lactic acid bacteria in their production. It characterises the production processes of dairy products such as kefir, yoghurt, cheese, and buttermilk, including the technological procedures and methods used in their production. In addition, this section focuses on the health benefits of fermented dairy products and analyzes the important health aspects of probiotics, prebiotics, postbiotics, and symbiotics. In the practical part of the thesis, hypotheses concerning the popularity of fermented dairy products are analysed, with an emphasis on yoghurt. Differences in consumption between women and men, the impact of affordability on consumption and the health benefits of increased consumption are further explored.
