Abstract:
Tato diplomová práce se zabývá studiem enologických přípravků a jejich projevem v daném sektu. Práce je rozdělena na část literární a experimentální. V literární části se popisuje výroba sektů tradiční metodou, a dále je pozornost věnována autolýze kvasinek a látkám, jež při tom hrají nepostradatelnou roli.
