The influence of natural yeasts on the qualitative parameters of wine

Abstract:

Tématem této diplomové práce byla problematika naturálních kvasinek a jejichnásledný vliv na kvalitativní parametry vína. V literární části byly popsány typyselektovanýh kmenů naturálních kvasinek a jejich vliv na průběh fermentace. Běhemvýzkumu byl mošt odrůdy révy vinné dané odrůdy rozdělen do sedmi demižónůs použitím rozdílných zákvasů nesacharomycentních kvasinek a jejich kombinací sesacharomycentním zákvasem v kombinaci s rozdílnou dobou fermentace. Na přístrojíchAplha a Gibertini byly stanoveny základní analytické parametry jednotlivých vzorků.Výsledky byly porovnány se studiemi, které se zabývají stejnou problematikou. Bylopotvrzeno, že použití naturálních kvasinek ovlivňuje aromatický projev vína dlesenzorických výsledků. Dále byla zjištěna přímá úměra mezi použitím naturálníchkvasinek a bezcukerného extraktu stejně jako vztahy mezi prokvašeným cukrem navýslednou hodnotou obsahu alkoholu vína.

Abstract:

Topic of this thesis was problematics of natural yeasts and their influence onqualitative parameters of wine in consequence. Influence of selected strain types ofnatural yeasts on fermentation performance have been described in the literary part.During the experiment was the stum of the specific wine variety divided into sevencontainers using different suspension of non-saccharomycent yeasts and combining themwith saccharomycent sourdough subsequently combined with different fermentationtime. Basic analytics parameters of individual samples were established on the Aplha andGilibertini devices. The results were compared with studies which were focusing on thesame problematics. According to the sensorical results has been confirmed that the use ofnatural yeasts affects aromatic expression of wine. Furthermore, it was found that thereexists a direct ratio between use of the natural yeasts and sugar free extract, and also effectof fermented sugar on the resulting value of content of alcohol in the wine.
