Simulation of the production process in the brewing industry

Abstract:

Tato diplomová práce se zabývá využitím simulačních modelů ve výrobním procesu v pivovarnictví. Přesněji v konečné fázi výroby piva při stáčení do lahví. Jedná se o praktické využití těchto metod v rámci reálného pivovaru. Cílem je analyzovat současný stav plnící linky, pro kterou bude vytvořen základní simulační model. Na základě tohoto modelu bude provedeno několik experimentů, které vycházejí z povahy plánovaných změn pivovaru. Jedním z experimentů bude také přidání poruchovosti jednotlivým zařízením linky. Různé změny či zlepšení budou následně analyzována a vyhodnocena z hlediska dopadů na plnící linku. Pro hlubší pochopení problematiky se první část této práce věnuje základním pojmům a principům v oblasti simulací, výrobního procesu a pivovarnictví. Důraz je však kladen především na druhou, praktickou část, kdy za pomocí simulačního softwaru SIMIO bude vytvořena již zmíněná simulace a její obměny. Na základě zjištěných výsledků budou na závěr navrženy případné změny pro lepší chod plnící linky.

Abstract:

This thesis deals with the use of simulation models in the production process in the brewing industry. More specifically in the final stage of beer production during bottling (filling). It is a practical application of these methods within a real brewery. The aim is to analyze the current state of the bottling line for which a basic simulation model will be created. Based on this model, several experiments will be carried out based on the nature of the planned changes to the brewery. One of the experiments will also be to add failure rates to the individual equipment of the line. The various changes or improvements will then be analysed and evaluated in terms of the impact on the bottling line. To gain a deeper understanding of the subject, the first part of this thesis discusses the basic concepts and principles in simulation, manufacturing process and brewing. However, the focus is mainly on the second, practical part, where the simulation and its variations will be created using the simulation software SIMIO. Based on the results obtained, possible changes for better operation of the filling line will be proposed at the end.
