Práce shrnuje současné vědecké poznatky o vlivu červeného masa na zdraví člověka. Teoretická část sestává z přesného vymezení této skupiny potravin, souhrnu dosavadních vědeckých důkazů o souvislosti konzumace červeného masa s rizikem vybraných onemocnění, se zvláštním důrazem na nádorová onemocnění, a přehledu současných odborných doporučení na toto téma.
