Abstract:
Kvasinky jsou hojně využívanými zástupci mikroorganismů, které nalezly uplatnění ve velmi širokém spektru průmyslových odvětví. Nejdříve se kvasinky začaly cíleně používat k výrobě potravin a nápojů, kde důkazy potvrzují jejich použití již několik tisíc let před naším letopočtem.
