Competitive Ability in Gastronomy

Abstract:

Cílem mé diplomové práce je sledování konkurenceschopnosti vybraných podniků v gastronomii a následné posouzení jejich využití konkurenční výhody. V teoretické části jsou popsány některé pojmy vyskytující se v gastronomii a historie a současnost gastronomie. Dále jsou popsány teorie týkající se konkurenceschopnosti a schopnosti získat konkurenční výhodu. V analytické části jsem popsala město, ve kterém byly vybrány jednotlivé podniky a to z hlediska obyvatelstva, cestovního ruchu a sportu. Dále jsou popsány jednotlivé podniky a jejich odpovědi na předem připravené otázky a porovnány i z mého hlediska pozorovatele. V návrhové části jsem se zaměřila na nedostatky, které byly zjištěny při zkoumání jednotlivých podniků.

Abstract:

The goal of my thesis is to watch the competitiveness of chosen companies in gastronomy and after that review application of competitive advantage. In theoretical part are described some terms used in gastronomy and history and present of gastronomy. Then are some theories of competitiveness and abilities to get the competitive advantage described. In analytical part I described the town where are chosen companies located from the point of population, tourism and sport. Then are individual companies described and their aswers on my questions and their are compared with my own opinion. In proposal part of my thesis I focused on deficiencies which were discovered by watching chosen companies.
