Abstract:
Cílem bakalářské práce je popsat využití diferenciální skenovací kalorimetrie (DSC) v potravinářství. V rámci bakalářské práce byly popsány základní metody termické analýzy a vliv teploty na fyzikálně - chemické vlastnosti potravin. Abstract:
The aim of the Bc. thesis is to describe the use of differential scanning calorimetry (DSC) in the food industry. The basic methods of thermal analysis and the influence of temperature on the physicochemical properties of foodstuffs were described in the framework of the bachelor thesis.
