Historical development of food, focusing on food waste

Abstract:

Bakalářská práce se zabývá historickým vývojem stravování a problematikou plýtváním potravinami. Cílem práce je zpracovat a přiblížit historický vývoj stravování, způsobu získávání potravin v minulosti, přiblížit současnou problematiku plýtvání potravinami a zjistit postoj stravovacích zařízeních k plýtvání potravinami. Teoretická část práce se zabývá popisem stravování v minulosti a teoretickým popisem plýtvání potravinami ve třech sektorech – v domácnosti, v obchodních řetězcích a ve stravovacích zařízeních. V analytické části je zkoumán postoj vybraných stravovacích zařízeních k dané problematice, příčiny vzniku gastroodpadu v jejich provozovnách, jak se snaží těmto odpadům předcházet a jak je zpracovávají. K výzkumu byla použita metoda polostandardizovaných rozhovorů. V návrhové části je zodpovězeno na dvě výzkumné otázky a to, zda stravovací zařízení mají dostatečný přehled, jak správně zacházet s gastroodpadem a zda stravovací zařízení efektivně nakládají se zbylými neprodanými porcemi.

Abstract:

The bachelor thesis deals with the historical development of food and the issue of food waste. The aim of the work is to process and approach the historical development of food, the method of obtaining food in the past, to approach the current issues of food waste and to find out the attitude of catering facilities to food waste. The theoretical part of the thesis deals with the description of catering in the past and the theoretical description of food waste in three sectors – in the household, in retail chains and in catering establishments. The analytical part examines the attitude of selected catering facilities to the issue, the causes of gastro-waste in their facilities, how they try to prevent this waste and how they process it. The method of semi-standardized interviews was used for the research. The design part answers two research questions, whether catering establishments have a sufficient overview of how to properly handle gastro-waste and whether catering establishments deal effectively with the remaining unsold portions.
