Analysis of the supply and serving of wines at selected establishments

Abstract:

Bakalářská práce je věnována Analýze nabídky a podávání vín ve vybraných provozovnách a jejím cílem je odhalit kvalitu znalostí obsluhujícího personálu o vínech a praktické dovednosti při podávání vína. Z teoretických znalostí a výsledku analýzy poukazuje práce na nedostatky v provozovnách, nabízí jejich vhodnou nápravu a samotným závěrem je návrh konceptu ideální provozovny. Práce je rozdělená do tří hlavních částí. První je teoretická část, která obsahuje teoretické základy práce personálu provozoven pracujícího s vínem a přibližuje problematiku servisu vína. Dále je přiblížena problematika spojená s nabízením vína v provozovnách. Práce je zaměřená na nabídku vín a personál restaurací a specializovaných zařízení jako jsou vinárny. V analytické části je proveden průzkum vybraných provozoven metodou mystery guest. Průzkum je zaměřený na šíři nabídky vybraných provozoven, znalosti obsluhujícího personálu o vínech, která nabízejí ve svých provozovnách a schopnost doporučit kvalitní víno a následný servis vína. Vyhodnocení probíhá na základě pozorování ve vybraných provozovnách. Výsledky jsou zaznamenány v bodovacích tabulkách a slovním hodnocením. Následuje celkové porovnání provozoven a vyhodnocení průzkumu. Poslední část práce odpovídá na stanovené hypotézy, nabízí řešení odhalených problémů a je uveden koncept ideální provozovny pro kvalitní nabídku a servis vína.

Abstract:

The bachelor’s thesis is devoted to analysis of the supply and serving of wines at selected establishments and aims to reveal quality of the service staff knowledge about wines and practical skills for serving wine. From the theoretical knowledge and the results of the analysis the work points out deficiencies in establishments, offers the appropriate correction and the actual conclusion is the design concept of the ideal establishment. The work is divided into three main parts. The first is the theoretical part, which contains the theoretical basical procedures for staff in establishments working with wine and shows the issues of service of wine. It is also aimed on the issue of offering wine itself in the establishments. The work is focused on the offer of wines and the staff of restaurants and specialized establishments such as wine bars. The analytical part is a survey of selected establishments by mystery guest. The survey is focused on the breadth of the menu in selected establishments, knowledge of the operating staff about the wines they offer in their facilities and the ability to recommend an appropriate wine, and subsequent serving of wine. Evaluation is based on observations in selected establishments. The results are shown with scorecards and verbal assessment. Following is a short comparison of the establishments and evaluation of the survey. The last part answers and compares the results to the hypotheses, offers a solution to found problems and provides the concept of the ideal establishment for offering high quality wines and serving of those wines.
