The importance and role of gastronomic services at hotel

Abstract:

Bakalářská práce se zabývá významem a úlohou gastronomických služeb v hotelu. Práce je teoreticko-aplikačního charakteru. V teoretické části je objasněn pojem hotel, jeho kategorizace, klasifikace, členění hotelů a jejich organizační struktura. Dále je v práci popsán stravovací úsek hotelu, jeho funkce, organizace, standardy a nároky na pracovníky. Druhá (praktická) část této práce je rozdělena na dva úseky. První podrobně analyzuje pražský hotel Seven Days. Zaobírá se jeho službami, hodnocením na internetových rezervačních systémech, organizační strukturou, zejména stravovacím úsekem a návštěvností jeho provozoven. Druhá část obsahuje závěry dotazníkového šetření, které zkoumají názor ekonomicky aktivních obyvatel Prahy na hotelové restaurace a úroveň jejich služeb. Výsledkem je většinové upřednostnění klasických restaurací, před kvalitními hotelovými, z důvodu nižších cen a dále získání přehledu o nárocích respondentů na stravovací služby v hotelu. Práce je nadále doplněna o návrhy na zvýšení návštěvnosti a zkvalitnění gastronomických služeb ve stravovacím úseku hotelu Seven Days.

Abstract:

The bachelor thesis deals with the importance and role of catering services at the hotel. The work is theoretical and applied nature . In the theoretical part, the concept hotel, its categorization , classification , classification of hotels and their organizational structure . The study also describes the eating section of the hotel, its functions , organization , standards and demands on workers . The second (practical ) part of this work is divided into two sections . The first analyzes in detail the Prague hotel Seven Days . It portrays his services , evaluating the Internet reservation systems , organizational structure , especially the catering section and the attendance of his premises. The second part contains the conclusions of the survey , which examined the opinion of the economically active population of Prague in the restaurant and level of service . The result is a majority preference for classic restaurants, quality hotel before , due to lower prices as well as an overview of the respondents' claims on food service at the hotel. Work continues to be accompanied by proposals to increase traffic and improve the quality of catering services in the catering section at Seven Days.
