Analysis of Service Quality at Selected Cafes in Prague

Abstract:

Diplomová práce analyzuje kvalitu poskytovaných služeb ve vybraných pražských kavárnách z hlediska komunikace a úrovně informovanosti obsluhujícího personálu v oblasti přípravy espressa dle dané certifikace. Dále práce zjišťuje a hodnotí poměr kaváren s nabídkou alternativních způsobů přípravy kávy a výběrové kávy a kaváren s běžnou nabídkou espressa. Zároveň jsou hodnoceny další parametry související s kvalitou poskytovaných služeb. Získaná primární data jsou využita ke komparaci dvou zvolených katastrů na území Prahy s odlišným podílem zahraničních turistů. Z výsledků výzkumu jsou odvozeny návrhy na zlepšení zjištěného stavu v oblasti kavárenství.

Abstract:

This Master's dissertation analyses the quality of service in preparation of espresso at selected Prague cafes with respect to the communication and the staff know-how of prescribed norms. The dissertation also evaluates and compares cafes offering alternative ways of preparation or select brands of coffee with those offering regular espresso only. A complementary analysis of other parameters associated with the quality of services is offered as well. The findings are applied to comparing two specific districts of Prague with the contrasting levels of foreign tourists. The closing sections outline suggestions as to how to improve the current situation in the coffee-serving industry.
