Chlorogenic acid and its potential

Abstract:

Tato bakalářská práce se zabývá kyselinou chlorogenovou s důrazem na její potenciál využití v kosmetice. Práce obsahuje pouze teoretickou část, kde se nachází přehled fenolických látek a sloučenin, ke kterým chlorogenová kyselina patří, její obecná charakteristika, syntéza, metody analýzy a extrakční metody. Část práce je věnovaná kávě, jelikož je zde také kyselina obsažena, anatomii kávového zrna a popisu jeho částí, zpracování, pražení a zelené kávě. Závěrečná část popisuje využití kyseliny chlorogenové v kosmetickém průmyslu.

Abstract:

The bachelor thesis deals with chlorogenic acid with emphasis on its potential for cosmetic applications. The thesis contains only the theoretical part, where an overview of phenolic substances and compounds to which chlorogenic acid belongs, its general characteristics, synthesis, methods of analysis and extraction methods are given. Part of the thesis is devoted to coffee, since the acid is also present, the anatomy of the coffee bean and a description of its parts, processing, roasting and green coffee. The final part describes the use of chlorogenic acid in the cosmetic industry.
