Evaluation of rennet coagulation time and curd quality

Abstract:

Cílem práce bylo najít vztah mezi časem syřitelnosti a sledovanými parametry a nahradit vizuální metodu stanovení času syřitelnosti objektivní metodou. Stejně tak najít objektivní metodu pro hodnocení jakosti sýřeniny. U vzorků tří druhů kaseinových mlék byly stanoveny základní analýzy chemického složení, kvalitativní analýzy, mikrobiologická analýza a stanoven čas syřitelnosti a jakost vzniklé sýřeniny. Mléko pocházelo z farem různých velikostí s různými plemeny. Mléko bylo odebíráno během celé laktace. Na základě výsledků byla provedena korelace mezi časem syřitelnosti a stanovenými parametry. Vliv na syřitelnost mléka měl bod mrznutí u mléka kravského, množství somatických buněk a titrační kyselost u mléka kozího a množství somatických buněk a mikrobiologická kvalita u mléka ovčího. Stanovení syřitelnosti mléka probíhalo vizuální a nefeloturbidimetrickou metodou pro zjištění rozdílu v detekci času syřitelnosti mezi těmito metodami. Mezi metodami nebyl prokázán statisticky průkazný rozdíl, proto je možné tento přístroj využít v praxi. Dále se stanovoval čas syřitelnosti pomocí viskozimetru, kdy ale nedošlo k prokázání inflexního bodu v průběhu měření viskozity mléka. Pro hodnocení jakosti sýřeniny byl použit ruční penetrometr a texturometr, kdy se hodnotila pevnost vzniklé sýřeniny. Při porovnání metod je možné použít ruční penetrometr přímo v praxi, protože mezi metodami nebyl prokázán rozdíl. Pomocí texturometru byla hodnocena pevnost sýřeniny pomocí několika metod, kdy metoda vtlačování se projevila jako vhodná metoda pro další studování deformačních vlastností sýřeniny.

Abstract:

The aim of the work was to find the relation between the rennet coagulation time and the monitored parameters and to replace the visual method of determining the rennet coagulation time with an objective method. Likewise, to find an objective method for evaluating the quality of curd. Basic samples of chemical composition, qualitative analyses, microbiological analysis were determined for samples of three types of casein milks, and the rennet coagulation time and the quality of curd were determined. The milk came from farms of different sizes, with different breeds. Milk was collected during lactation. Using the results, there was made a correlation between the rennet coagulation time and the monitored parameters. Rennet coagulation time was affected by freezing point in cow's milk, somatic cell count and titratable acidity in goat's milk and somatic cell count and microbiological quality in sheep's milk. Rennet coagulation time was determined by visual and nepheloturbidimetric method to determine the difference in the detection of rennet coagulation time between these methods. There was no statistically significant difference between the methods, so it is possible to use this device in practice. Furthermore, rennet coagulation time was determined using a viscometer, but inflection point was not detected during the measurement of milk viscosity. A hand-held penetrometer and a texturometer were used to evaluate the quality of curd and was evaluated the strength of curd. It is possible to use a hand-held penetrometer directly in practice, because there was no statistically significant difference between these methods. The strength of the curd was evaluated using several methods by a texturometer, where the imperfect squeezing flow appeared to be a suitable method for further study of the deformation properties of the curd.
