Abstract:

Bakalářská práce se zabývá odborným vzděláváním zaměstnanců v hotelnictví a gastronomii. Hlavním cílem bakalářské práce je zjistit využitelnost gastronomických kurzů v praxi z pohledu zaměstnavatelů. Dílčím cílem bakalářské práce je navržení nového kurzu Společenského chování pracovníků v gastronomii. Odborná práce se skládá ze tří částí, a to z teoretické, analytické a návrhové. Teoretická část zprvu definuje obor gastronomie a jeho historický vývoj včetně zmínky o některých významných českých svátcích spojených právě s gastronomií. Další část se věnuje gastronomickým oborům u nás, povinnému vzdělávání pracovníků v gastronomii a možnostech nabízených gastronomických kurzů. Analytická část obsahuje dvě části. V první části byla použita metoda řízeného rozhovoru v deseti restauracích, přičemž řízený rozhovor byl zaměřen na gastronomické kurzy. Ve druhé části byla použita metoda komparace z hlediska využitelnosti gastronomických kurzů v praxi u vybraných zaměstnavatelů. Návrhová část vychází z poznání analytické časti a jejím výsledkem je doporučení pro zaměstnavatele ohledně následného vzdělávání formou gastronomických kurzů pro jejich zaměstnance. Dále je zde navržen nový gastronomický kurz – Společenské chování pracovníků v gastronomii. V závěru jsou také vyhodnoceny původně stanovené hypotézy.

Abstract:

The bachelor thesis deals with the professional training of employees in the hotel industry and gastronomy. The main aim of the bachelor thesis is to find out the usability of gastronomic courses in practice from the employers point of view. The partial aim of the bachelor's thesis is to propose a new course - Social behavior of workers in gastronomy. The bachelor thesis consists of three parts, namely theoretical, analytical and design. The theoretical part of bachelor thesis defines first the gastronomy industry and its historical development, including the mention of some important Czech holidays connected with gastronomy. Another part is about gastronomic study programs at schools, the obligatory education of gastronomy workers and the opportunities offered by the gastronomic courses. The analytical part consists of two parts. In the first part was used the interviewed method in ten restaurants, while the interview focused on gastronomy courses. In the second part was used the comparison method. The design part is based on the knowledge of the analytical part. Result is a recommendation for the employer about the subsequent education with gastronomic courses for their employees. There is also a new gastronomy course - Social behavior of gastronomy workers. Finally, the hypotheses originally determined are also evaluated.
