Hlavním úkolem diplomové práce bylo zjistit, zda bude použití fotometrie a polarimetrie sloužit ke stanovení kinetických křivek hydrolýzy bílkovin, případně škrobu z výchozích surovin. Jako výchozí suroviny byly použity amarantová mouka, amarantové zrno a vedlejší produkt odpadající při výrobě kolagenních střívek. Abstract:
The main goal of thesis was concerning the possibilities using photometry and polarimetry for the study of amaranth and collagen hydrolyse. Enrich of starch and protein in amaranth raw material was explored too.
