Abstract:
Bakalářská práce se zabývá rizikem mikrobiální kontaminace tzv. raw food neboli syrové stravy. Teoretická část popisuje výživu a její vývoj v čase, taktéž zdravotním,nutričním a mikrobiálním rizikem syrové stravy. Praktická část obsahuje vyhodnocení mikrobiální kontaminace vybraných skupin raw potravin, které byly zakoupeny bez obalu nebo již zabalené. Abstract:
The bachelor thesis looks into microbial contamination of raw food diet. Theoretical part of the thesis deals with nutrition and its evolution,as well as health, nutritional and microbial risks of raw food diet.
