Abstract:
Diplomová práce je zaměřena na fermentované masné výrobky s přídavkem prebiotik. Jejím cílem je charakterizovat chemické složení skopového masa, technologii výroby fermentova-ných masných výrobků a použitá probiotika a prebiotika. Abstract:
The thesis is focused on fermented meat products with added prebiotics. Its aim is to cha-racterize the chemical composition of sheep meat, technology of production fermentate meat products and used probiotics and prebiotics.
