Comparative analysis of services provided in selected hotel restaurants

Abstract:

The thesis is focused on the assessment of the provision of food services at selected hotel restaurants and the carrying out comparison determines proposals for their improvement. The work contains an analysis of selected food service hotel facilities: the Hotel DoubleTree by Hilton and Bratislava hotel. The theoretical part, based on research carried out literature contains information on catering services in selected hotels in feeding centers and feeding centers for workers. The first chapter compares the food services at selected hotel restaurants and on the basis of comparison to determine proposals for improving the provision of catering services. The other goal we focused on identifying the strengths and weaknesses of selected restaurant facilities, where mutual comparison of the results obtained, we propose specific solutions. In the design of the work are given suggestions and recommendations that we, on the basis of the research focused on improving the provision of catering services, particularly in the field of regional products, as well as proposals in the language learning service, because of the human factor playing in the gastronomy sector a key role.

Abstract:

Predložená diplomová práca je zameraná na posúdenie poskytovaných stravovacích služieb vo vybraných hotelových reštauráciách a na základe komparácie určuje návrhy na ich zlepšenie. Práca obsahuje podrobnú analýzu stravovacích služieb vybraných hotelových zariadení: Hotela DoubleTree by Hilton a hotela Bratislava. Teoretická časť práce, na základe vykonanej rešerše odbornej literatúry, obsahuje informácie o stravovacích službách vo vybraných hoteloch, v stravovacích strediskách a o pracovníkoch stravovacích stredísk. Hlavným cieľom diplomovej práce je komparovať stravovacie služby vo vybraných hotelových reštauráciách a na základe komparácie určiť návrhy na zlepšenie poskytovaných stravovacích služieb. Parciálne ciele práce sme zamerali na vytipovanie slabých a silných stránok vybraných reštauračných zariadení, kde na základe vzájomnej komparácie dosiahnutých výsledkov sme navrhli konkrétne riešenia. V návrhovej časti práce sú uvedené návrhy a odporúčania, ktoré sme na základe realizovaného výskumu zamerali na zlepšenie poskytovania stravovacích služieb, a to najmä v oblasti poskytovania regionálnych produktov, ako aj na návrhy v rámci jazykového vzdelávania obsluhy, a to z dôvodu, že ľudský faktor hrá v gastronomických zariadeniach kľúčovú úlohu.
