Tato diplomová práce se zabývá obecným studiem glutathionu v hroznech révy vinné. V teoretické části je popsán metabolismus akumulace glutathionu v hroznu a zásobní i antioxidační vlastnosti glutathionu ve víně. V praktické části je řešen experiment, ve kterém jsou srovnány tři odrůdy (Sauvignon, Ryzlink rýnský a Frankovka), u kterých je zkoumán vliv termínu na obsah glutathionu v hroznu. This diploma thesis deals with the general study of glutathione in grapes of grapevine. The theoretical part describes the metabolism of glutathione accumulation in grapes, the storage and antioxidant properties of glutathione in wine.
