Possibility of substitution salt in foods
Abstract:
Bakalářská práce se zabývá kuchyňskou solí jako nedílnou součástí výživy všech lidí, od její výroby až po použití. Byly hledány i různé náhrady soli kvůli možnému působení zvýšeného příjmu sodíku na hypertenzi, kdy je NaCl nahrazeno jinými látkami. Tyto náhrady mají i jinou chuť než slanou, proto byla provedena senzorická analýza různých typů soli a náhrad.

This bachelor thesis is focused on salt as the integral part of nourishment of all people, concerning its producing up to its application. Moreover, because of possible various incidences of increased consummation of sodium to hypertension, when the NaCl is substituted with other substances, several substitutes of salt were searched for.
