Abstract:

V práci „Kvalita a variabilita kávy“ je popsána: historie kávy, charakteristika, technologické zpracování, chemické složení kávových zrn a vliv kávy na zdraví člověka. Byly posuzovány vzorky kávy Coffea arabica z 14 zemí světa. Pomocí kapalinové chromatografie bylo zjištěno množství kofeinu a kyseliny chlorogenové (CGA) v upražených, zelených i bezkofeinových kávových infuzích. Nejmenší obsah kofeinu byl skutečně potvrzen v bezkofeinové kávě Columbia a to jak v upraženém tak i zeleném zrnu. Největší obsah kofeinu obsahovala pražená zrna kávy Nicaragua (1,3251 g/100g) a zelená zrna kávy Honduras Karla (0,3488 g/100g). Kyselina chlorogenová byla nejvíce obsažena v upražených zrnech kávy Kenya (1,6012 g/100g) a nejméně v upražených zrnech kávy Colombia (0,6479 g/100g). Obsah kyseliny chlorogenové byl nejvyšší v nepražených zrnech kávy Colombia bez kofeinu (1,7928 g/100g) a nejnižší rovněž v nepražených zrnech a to kávy Honduras Mujeres (1,217 g/100g). Bylo provedeno měření hmotnosti, pevnosti, šířky, délky, senzorická analýzy kávy jako nápoje a měření barvy mletých vzorků upražené kávy pomocí spektrofotometru. Nejpevnější kávovníková zrna měl vzorek Kenya a nejkřehčí zrna měl vzorek z Cuby, nejtmavší barvu měla zrna Colombia. Senzoricky nejpříjemnější byl nápoj z kávy Colombia.

Abstract:

The thesis „Quality and variability of coffee“ describes: history of coffee, characteristics, technological processing, chemical composition of coffee beans and influence of coffee on human health. Coffea arabica coffee samples from 14 countries were evaluated. The amount of caffeine and chlorogenic acid (CGA) in roasted, green and decaffeinated coffee infusions was determined by liquid chromatography. The lowest caffeine content was indeed confirmed in decaffeinated Columbia coffee, both in roasted and green beans. The largest caffeine content was roasted coffee beans Nicaragua (1.3251 g / 100g) and green coffee beans Honduras Karla (0.3488 g / 100g). Chlorogenic acid was most present in the roasted beans of Kenya (1.6012 g / 100g) and least in the roasted beans of Colombia (0.6479 g / 100g). The content of chlorogenic acid was highest in unroasted beans of Colombia decaffeinated coffee (1,7928 g / 100g) and lowest also in unroasted beans Honduras Mujeres coffee (1,217 g / 100g). We measured weight, strength, width, length, sensory analysis of coffee as a beverage and color measurement of ground samples of roasted coffee by spectrophotometer. The strongest coffee beans were in the Kenya sample and the most fragile in the Cuba sample, the darkest in the Colombia. Sensationally the most pleasant was the coffee drink Colombia.
