Promotion of forgotten foods and their use in contemporary gastronomy
Abstract:
Tématem této bakalářské práce jsou možnosti propagace potravin, které byly v minulosti běžnou součástí našeho jídelníčku, ale v běhu času již byly zapomenuty nebo odsunuty na okraj zájmu. Věnuje se ohlédnutí za historií využití, pro nás dnes již netradičních, surovin a možnostem vrácení některých z nich do gastronomie současné doby.
Abstract:
The theme of this thesis are opportunities for promotion of foods that were previously a part of our diet, but in course of time has been forgotten or marginalized interest. He is looking back at the history of use to us now non-traditional materials and the possibility of returning some of them to gastronomy to the present time.
