Stanovení dusitanů v masných výrobcích

Determination of nitrite in meat products
Abstract:
Práce se zabývá masem včetně jeho složení, prospěšných látek a stavby svalového vlákna. Část práce je věnována anomáliím v procesu zrání masa a samotným technologiím jeho zpracování. Pozornost je věnována dusitanům, jejich stanovení a vlivu na zdraví člověka.
Abstract:
The work deals with meat including its composition, beneficial substances and the structure of muscle fiber. Part of the work is devoted to anomalies in the maturing process of meat and to the processing technologies themselves. Attention is devoted to nitrites, their determination and effect on human health.
