The evaluation of wines aging in different types of barrique barrels.

Abstract:

Diplomová práce je zaměřena na zhodnocení vín školených v různých sudech typu barrique. Teoretická část je rozdělena do dvou částí. První část popisuje výrobu vína v těchto typech sudů, druhy dřeva pro výrobu sudů typu barrique a jejich původ a průběh zpracování od těžby stromů, sušení dřeva, opracování, toastování až konečnou kompletaci sudů. Druhá část teorie popisuje složení a strukturu dřeva, extrahovatelné látky, které se tvoří za procesu toastování. Práce se dále zaměřuje na aromatický profil a senzoricky chuťové vlastnosti těchto látek, které víno získává během školení v sudech typu barrique.Experimentální část porovnává výsledky z chromatografické a spektrografické analýzy pěti druhů vín, které byly školeny v různých typech sudů barrique. Tyto jednotlivé sudy se odlišovaly původem použitého dřeva a typem vypálení. Pozornost byla zaměřena převážně na obsah volatilních látek, které jsou extrahovatelné pouze z tohoto typů sudu. Závěrem experimentální práce byla provedena senzorická analýza za účasti proškolených degustátorů, kdy byla vína senzoricky hodnocena, a určoval se aromatický profil. Tyto výsledky analýz a hodnocení byly pro přehlednost zaneseny do tabulek a grafů a následně podrobně zhodnoceny a okomentovány.

Abstract:

The thesis pursues the evaluation of wines aging in different types of barrique barrels. The theoretical part is divided into two parts. The first part describes winemaking in this type of barrels, the kinds of wood the barrique barrels are made of - their origin and the process from the logging, seasoning, machining of the wood and toasting to final completation of the barrels. The second part describes the composition and structure of the wood, substances which can be extracted during the process of toasting. The thesis also pursues the aromatic profile and sensory tasting characteristic of these substances that are imparted into the wine during the aging in the barrique barrels.The experimental part of the thesis compares the results from chromatographic and spectroscopic analysis of five kinds of wine which were aging in different kinds of barrique barrels. These particular barrels differed from each other by the origin of wood and the type of toasting. The attention was brought mainly to the content of the volatile compounds that could be extracted only from these kinds of barrels. The end of the experimental part of the thesis contains sensory analysis with the participation of trained tasters when the wines were evaluated by senses and the aromatic profile was determined. The results of analysis and evaluations were recorded into the charts and tables for clarity and afterwards they were elaborately evaluated and commented.
