The Nutritional footprint

Abstract:

Práce se zabývá nutriční stopou, pojednává o dopadech spotřeby potravin na životní prostředí a dává do souvislostí nutriční stopu, jako důležitý aspekt rozvoje regionu. K výpočtu nutriční stopy byla použita veřejně dostupná kalkulačka nutriční stopy, která je v práci podrobně popsána. V teoretické části je nastíněna problematika udržitelného stravování, stravovacích návyků obyvatel a negativních dopadů s nimi spojených. Cílem práce je především analyzovat, zda je povědomí o problematice nutriční stopy dostatečně rozšířeno a zda jsou v praxi dopady spotřeby na ŽP zohledňovány. Dalším cílem práce je zjistit, zda lze ve vybrané lokalitě udržitelné stravování dále rozvíjet. Praktická část je zaměřena na ověření postupů účelových stravovacích zařízení, a to výpočtem jednotlivých nutričních stop nabízených pokrmů a provedených rozhovorů. Z výpočtů nutriční stopy bylo zjištěno, že dopady na ŽP nejsou školním stravovacím zařízením při sestavování jídelních lístků příliš zohledňovány. Toto zjištění bylo potvrzeno i doplňkovými rozhovory. Možnosti rozvoje udržitelného stravování z lokálních zdrojů byly identifikovány jako dostatečné.

Abstract:

The thesis deals with the nutritional footprint, discusses the impacts of food consumption on the environment and puts the nutritional footprint in context, as an important aspect of the region's development. A publicly available nutritional footprint calculator was used to calculate the nutritional footprint, which is described in detail in the work. The theoretical part outlines the issues of sustainable eating, eating habits of the population and the negative impacts associated with them. The aim of the work is mainly to analyze whether the awareness of the issue of nutritional footprint is sufficiently widespread and whether in practice the impacts of consumption on the environment are taken into account. Another goal of the work was to find out whether sustainable catering can be further developed in the selected locality. The practical part is focused on the verification of the procedures of special-purpose catering facilities, namely by calculating the individual nutritional traces of the offered meals and conducted interviews. From the calculations of the nutritional footprint, it was found that the impacts on the environment are not very taken into account by the school catering facility when compiling the menus. This finding was confirmed by additional interviews. Opportunities for the development of sustainable diets from local sources have been identified as sufficient.
