Bakalářská práce popisuje fermentované mléčné výrobky z hlediska historie a technologie výroby. Historie mlékárenství je zde popsána od prvopočátků ve světě přes rozvoj konkrétních malých českých a moravských mlékáren až po průmyslovou výrobu fermentovaných mléčných výrobků. Abstract:
The aim of this bachelor thesis is to describe fermented dairy products in term of dairying history and technology. Dairying history is characterized from the beginning in the world through development of concrete small Czech and Moravian dairies followed by industrial production of fermented dairy products.
