Diplomová práca sa zaoberá nutričným zložením rastlinných náhrad mäsa s dôrazom na obsah vybraných mikronutrientov (Fe, Zn, Ca, Mg). Teoretická časť uvádza základné informácie o rastlinných náhradách mäsa, obsahu makronutrientov, minerálnych látok a možných prínosoch či rizikách spojených v súvislosti s ich konzumáciou.
