Abstract:

Práce je zaměřena na současnou úroveň poznání těch vlastností oxidu siřičitého, které jsou důležité ve vinifikačním procesu, na jeho formy, metody měření, metody a místa aplikace. Hodnotí a porovnává legislativní ukotvení problematiky limitů pro obsah oxidu siřičitého ve finálním produktu - víně, uváděném na trh v USA a v zemích EU. Na těchto základech se pokouší o nástin dalšího vývoje jak v oblasti legislativy, tak v oblasti vývoje vinařských technologií, a to s ohledem na předpokládaný další tlak na kvalitu potravin a transparentnost obsahu látek v potravinách obsažených. Dochází k závěru, že není příliš pravděpodobné další snižování hladin oxidu siřičitého ve víně na legislativní úrovni. Současně ale také ukazuje, že skutečný obsah oxidu siřičitého je jistým měřítkem kvality vinařovy práce, a to ať už připravuje víno konvenčním způsobem nebo některým z alternativních postupů.

Abstract:

The work is focused on the current level of knowledge of those properties of sulfur dioxide that are important in the vinification process, on its forms, measurement methods, methods and points of application. It evaluates and compares the legislative anchoring of the issue of limits for the content of sulfur dioxide in the final product - wine, marketed in the USA and in EU countries. On this basis, it attempts to outline further developments both in the area of legislation and in the area of wine technology development, taking into account the expected further pressure on food quality and the transparency of the content of substances contained in food. It concludes that further reductions in sulfur dioxide levels in wine at legislative level are not very likely. At the same time, it also shows that the actual content of sulfur dioxide is a certain measure of the quality of the winemaker's work, whether he prepares the wine in a conventional way or one of the alternative procedures.
