The bachelor dissertation analyzes the formation of cafes and coffee bars of the third wave coffee in the capital city of Prague and the differences between the cafes of the first-wave of coffee, the second-wave of coffee and the third-wave of coffee. Bakalárska práca analyzuje vznik kaviarní tretej vlny kávy na území hlavného mesta Prahy a odlišnosť od kaviarni predchádzajúcich dvoch vĺn. Analýza prebehla na základe vybraných kritérií (ponuka jednotlivých druhov káv, podávanie kávy, kaviarenský nápojový lístok, dizajn a interiér kaviarne) v 9 kaviarňach v Prahe.
