Cafes and coffee bars

Abstract:

The bachelor dissertation analyzes the formation of cafes and coffee bars of the third wave coffee in the capital city of Prague and the differences between the cafes of the first-wave of coffee, the second-wave of coffee and the third-wave of coffee. The analysis was based on the selected criteria (offer of various kinds of coffee, coffee service, cafeteria beverage menu, interior design of the cafes) in nine cafes in Prague. Due to the specified objective of the work the following hypothesis was determined: A range of mixed drinks based on the coffee on the beverage menus is correlated with the advent and development of the third-wave coffee cafes. Based on the analysis of offers of specialty coffee drinks in the selected cafes, which presented the different waves of coffee, we can determine an opinion that with the advent of the third-wave of coffee there occurs an offer increase of the specialty coffee drinks in these cafes. To offer specialty coffee drinks there is a trend to get one´s own recipes based on season and freshness. The results of the analytical part of the thesis were summarized into my recommendations for the investors who want to be in the business within the cafes area. These results are summarized in the part of the recommendation. The recommendations reflect the development of the third-wave of coffee which prefers the alternative methods of coffee preparation, a unique coffee origin, a skilled barista and an original offer of specialty coffee drinks.

Abstract:

Bakalárska práca analyzuje vznik kaviarní tretej vlny kávy na území hlavného mesta Prahy a odlišnosť od kaviarni predchádzajúcich dvoch vĺn. Analýza prebehla na základe vybraných kritérií (ponuka jednotlivých druhov káv, podávanie kávy, kaviarenský nápojový lístok, dizajn a interiér kaviarne) v 9 kaviarňach v Prahe. Vzhľadom k zadanému cieľu práce bola stanovená nasledujúca hypotéza: Šírka ponuky miešaných nápojov pripravených z kávy na nápojových lístkoch je súvzťažná s príchodom a rozvojom kaviarní tretej vlny kávy. Na základe analýzy ponuky kávových špecialít v kaviarňach, ktoré prezentovali jednotlivé vlny kávy, možno vysloviť názor, že s príchodom tretej vlny kávy došlo aj rozšíreniu ponuky kávových špecialít v týchto kaviarňach. Do ponuky kávových špecialít sa dostáva trend vlastných receptúr na základe sezónnosti a čerstvosti. Výsledky z analytickej časti bakalárskej práce som zhrnul do odporúčaní pre investorov v oblasti kaviarenstva. Tieto výsledky sú zhrnuté v návrhovej časti. Odporúčania odzrkadľujú vývoj kaviarní tretej vlny kávy, ktorý preferuje alternatívne metódy prípravy kávy, jednoznačný pôvod kávy, zručného baristu a originálnu ponuku kávových špecialít.
