Teoretická část bakalářské práce přibližuje problematiku bílkovin ve stravě, jejich popis a vysvětlení důležitosti jejich přítomnosti ve stravě. Bílkoviny jsou zde popsány i z hlediska chemického složení a podrobněji jsou charakterizovány bílkoviny v mléce a mléčných výrobcích. Dále tato kapitola obsahuje metody stanovení bílkovin. The theoretical part of the Bachelor thesis approximates the issue of proteins in the diet, their description and explanation of the importance of their presence in the diet. Proteins are also described in terms of chemical composition and proteins in milk and dairy products are described in more detail.
