Toxic and genotoxic effects of food dyes evaluated by Allium cepa test

Abstract:

Diplomová práce je zaměřená na stanovení toxicity a genotoxicity vybraných potravinářských barviv pomocí testovacího organismu Allium cepa. Teoretická část práce je věnována potravinářským barvivům, jejich dělení a detailnějšímu popisu vybraných zástupců jednotlivých kategorií. Dále je v práci uvedena platná legislativa řešící podmínky, za jakých mohou být barviva v potravinářském průmyslu používána, a to jak v zemích Evropské unie, tak mimo ni. Zmíněn je také vliv syntetických barviv na životní prostředí, přičemž je řešena především problematika azobarviv. Poslední kapitola pojednává o možnostech využití testu na Allium cepa při hodnocení vlivu odpadních a dalších látek na životní prostředí a člověka. V experimentální části práce je pomocí testu na Allium cepa hodnocena toxicita a genotoxicita potravinářských barviv tartrazinu, azorubinu a extraktu z červené řepy.

Abstract:

The master thesis is focused on assessment of toxicity and genotoxicity of selected food dyes using test organism Allium cepa. The theoretical part is consecrated to food dyes, their distribution and a more detailed description of selected representatives of individual categories. Furthermore, the work presents the current legislation addressing the conditions under which dyes can be used in the food industry, both in the countries of the European Union and beyond. The influence of synthetic dyes on the environment is also mentioned, while the issue of azo dyes is addressed. The last chapter deals with the possibilities of using the Allium cepa test in evaluating the impact of waste and other substances on the environment and humans. In the experimental part of the work, the toxicity and genotoxicity of food dyes tartrazine, azorubine and beet extract are evaluated using the Allium cepa test.
