Lactose intolerance and possibilies of consuming dairy

Abstract:

Tato bakalářská práce Laktózová intolerance a možnost konzumace mléčných výrobků pojednává o laktózové intoleranci, jednom z nejčastěji se vyskytujících onemocnění trávicího traktu. Laktózová intolerance znamená neschopnost trávit mléčný cukr – laktózu, v důsledku chybějícího enzymu laktázy. Předmětem práce je přiblížit a charakterizovat laktózovou intoleranci, její výskyt, existující druhy, projevy, možnosti diagnostiky, léčby a v neposlední řadě i dietní východiska. Dále se práce zaměřuje na potraviny a výrobky, které jsou v dietních opatřeních vhodné, a které nikoliv. Přibližuje technologickou výrobu a popis mléčných výrobků bez obsahu nebo s nízkým obsahem laktózy. Na závěr se věnuje i rostlinným alternativám mléka a výrobkům z nich.

Abstract:

This bachelor thesis Lactose intolerance and possibilies of consuming dairy discusses lactose intolerance, one of the most common diseases of the digestive tract. The term lactose intolerance means the inability to digest milk sugar – lactose, due to lack of the enzyme lactase. The subject of this thesis is to further analyse and characterise lactose intolerance, its occurrence, existing types, signs, diagnostic and treatment methods, and last but not least the dietary options. This thesis further focuses on the foodstuffs and products which are suitable and which are not in the diets. It also describes the technological production and dairy products without or with low content of lactose. It concludes with the plant-based substitutes for milk and products made of the same.
