Abstract:
Diplomová práce se zabývá zhodnocením metod pro stanovení obsahu škrobu. Teoretická část se zabývá charakteristikou škrobu, včetně chemických a fyzikálních vlastností škrobu. Dále jsou zde stručně popsány jednotlivé druhy škrobu a výrobky ze škrobu. Další část pojednává o fyzikálních a chemických metodách stanovení sacharidů. This diploma work deals with the evaluation of methods for the determination of starch content. A theoretical part handles starch characteristic including chemical and physical properties and further briefly describes the particular types of starch and starch products.
