Vegan and Vegetarian Gastronomy in the City of Prague

Abstract:

Bakalářská práce je věnována veganské a vegetariánské gastronomii. Cílem této práce je zjistit možnosti a alternativy veganských a vegetariánských restaurací a také alternativy jaké nabízí konvenční restaurace pomocí odpovědí manažerů. Hlavní výzkumnou otázkou je zjistit četnost a dostupnost veganských a vegetariánských restaurací a zjistit jaké alternativy nabízejí klasické restaurace, zdali jsou jejich jídelní lístky přizpůsobené rostlinné stravě a speciálním požadavkům zákazníků. Dílčím cílem této práce, bylo zjistit nabídku veganských a vegetariánských restaurací, jaké jsou jejich hlavní směry a zda upřednostňují v první řadě kvalitu surovin. Výzkum se opírá o analýzu řízeného rozhovoru s manažery a majiteli vybraných restaurací. Ke zpracování této bakalářské práce byla použita metoda primárního sběru dat, komparace a analýza. V této práci byla provedena rešerše odborné literatury, byly využity odborné zahraniční články, internetové zdroje a odborná literatura.

Abstract:

Bachelor thesis is dedicated to vegan and vegetarian gastronomy. The goals of this bachelor thesis are investigating the possibilities and alternatives vegan and vegetarian restaurants and also which alternatives conventional restaurants advertised with assistance from the managers answers. The main reserch question is find out the honestly and availability vegan and vegetarian restaurants and also find out which alternatives offer the regular restaurants, if they also have adapted menu for the plant food and they can oblige specials requirements from customers. Sub-objective of this bachelor these was find the offer vegan and vegetarian restaurants, what they have like a main directions and if i tis on the first place quality of groceries for them. The research is based on an analysis with controlled interview with a managers and owners from chosen restaurants. For processing this bachelors thesis was used method of primary data collection, comparison and analysis. In this thesis was made selection from literature, also there was used professional foreign articles, source from internet and literature.
