Effect of the sur lie method on the biogenic amines content in wine

Abstract:

Závěrečná práce se zabývá porovnáním standardní technologie výroby s metodou sur lie a jejím vlivem na obsah biogenních aminů. Byly porovnávány tři odrůdy v obou typech výroby, u odrůdy Rulandské bílé byla metoda zrání na kvasničních kalech zkoumána ještě v dubovém sudu. Kromě již zmíněné odrůdy byly vybrány ještě odrůdy Kerner a Veltlínské zelené. Literární rešerše se zaměřuje na metodu sur lie, vhodnost vstupního materiálu, způsoby ležení na kalech, autolýzu kvasinek a uvolňování mannoproteinů. Poskytuje výčet možných pozitivních vlivů na výsledná vína, zmiňuje však také jejich rizika. V další části se práce je věnován prostor biogenním aminům, jejich charakteristice, základnímu rozdělení, vlivu na lidské zdraví a všem aspektům, které ovlivňují jejich koncentraci ve víně. Praktická část se pak zabývá odrůdami, viničními tratěmi a postupem experimentu, jehož výsledky jsou analyzovány pomocí přístrojů ALPHA a HPLC. Všechny parametry jsou podrobně rozebrány a nejdůležitějším zjištěním bylo zvýšení obsahu biogenních aminů ve vínech odrůd Rulandské bílé (včetně varianty na sudu) a Veltlínské zelené, které byly míchány na kalech. Závislost však nebyla potvrzena u odrůdy Kerner, což mohlo být způsobeno inhibičním charakterem nižšího pH. Senzorickým hodnocením pak byl potvrzen pozitivní vliv metody sur lie zejména na odrůdu Rulandské bílé, které uchvátilo komisi zejména svou strukturou a plností.

Abstract:

The final thesis deals with the comparison of the standard production technology with the sur lie method and its influence on the biogenic amine content. Three varieties in both types of production were compared and the Pinot Blanc was aged on yeast lees in oak barrels. In addition to the above-mentioned grape variety, Kerner and Veltliner were selected. The literature search focuses on the sur lie method, the suitability of the input material, the methods of lying on the lees, yeast autolysis and the release of mannoproteins. It lists the possible positive effects on the resulting wines and mentions their risks. In the next part, the work deals with biogenic amines, their characteristics, their basic distribution, their influence on human health and all aspects affecting their concentration in wine. The practical part deals with varieties, vineyards and the experimental process, whose results are analysed using ALPHA and HPLC analysers. All the parameters are described in detail, and the most important finding was the increase in the biogenic amine content of the Pinot Blanc (including the oak version) and Grüner Veltliner varieties blended on lees, but the dependence was not confirmed for the Kerner variety, which may have been due to the inhibitory character of the lower pH. The sensory evaluation then confirmed the positive effect of the sur lie method, especially on the Pinot Blanc, which impressed the panel in particular for its structure and full body.
