Abstract:
První část práce se zabývá surovinami vhodnými pro výrobu ovocných vín, jejich chemickým složením, správnou sklizní a zpracováním, dále technologií výroby, vadami vín a právními požadavky týkajícími se ovocných vín. The first part of this thesis deals with raw materials suitable for production of fruit wines, their chemical composition, proper harvest and processing, then wine production technology, wine faults and legal requirements concerning fruit wines.The other parts describe the methodology used for analytical parameters determination and sensory evaluation of commercial samples.
