Preservatives in food and its effect on the human health
Abstract:
Práce je zaměřená na konzervační látky a to konkrétně na: kyselinu benzoovou, boritou, propionovou, sorbovou a jejich soli. Jsou zde uvedené základní vlastnosti, výroba, expozice, toxikologická a biologická data a především vliv na zdraví člověka.
Abstract:
The work is focused on preservatives, particularly benzoic acid, boric acid, propionic acid, sorbic acid and their salts. Basic properties, manufacturing process, exposure, toxicological and biological data and the effect they have on human health were described.
