Tea in beverage gastronomy

Abstract:

V teoretické části se zaobírám historií čaje, legendami, které jsou s čajem spojeny a také místy, kde se čaj pěstoval a nyní pěstuje. Jako zajímavost jsem do teoretické části vložila i rituály, které k tomuto nápoji patří. Dále se věnuji jeho pěstování, zpracování, vzniklým druhům čaje a samozřejmě nemůže chybět informace o jeho léčivých účincích a vlivech na lidský organismus. Část práce je též věnována vzniku čajoven a rozhodně zde nechybí spojení čaje s gastronomií. V analytické části se zaměřuji na svůj výzkum, který byl proveden metodou mystery guest. Zde se čtenář setká hned s několika podniky, konkrétně s 8 čajovnami a 4 kavárnami. U každého podniku je uvedena stručná charakteristika konkrétního místa a dále následuje samotný výzkum, který je zaměřen na prostředí a atmosféru, čajový – nápojový lístek, obsluhu a její informovanost a ochotu poradit s výběrem, dále pak následuje vybraný čaj a jeho cena, barva čaje, vůně čaje, chuť čaje a nabídka doplňujících pokrmů. U některých podniků je i uvedena zajímavost, na kterou jsem během své návštěvy narazila. Cílem mé bakalářské práce je zhodnotit kvalitu nabízených služeb. Na cíli jsou postaveny dvě hypotézy, které jsem si stanovila. V návrhové části jsou uvedena doporučení, která navazují na zjištěné nedostatky v analytické části. Uvádím zde také jednu čajovnu, která slouží jako vzor pro ostatní čajovny, jelikož z mého výzkumu vychází jako nejlepší podnik. Budu ráda, když má práce poslouží čtenáři jako prvotní informace o čaji a zavede ho k zamyšlení nad nedostatky čajoven a kaváren, které by bylo potřeba v budoucnu odstranit, aby byly nabízeny klientům lepší služby v těchto podnicích.

Abstract:

Theoretical part aims at history of tea, legends subjecting tea as well as places where tea was grown and is still grown. To add interest I included rituals belonging to such a beverage. I also look into tea growing, processing, kinds of tea and last but not least I did not omit health effects and influence on human body. Moreover, I give a brief insight into tearooms origin and a connection between tea and gastronomy. The main focus of analytical part is my research which was conducted by mystery guest method. A reader is acquainted with several places, concretely eight tearooms and four coffee bars. Each place is briefly described followed by an account of the research focused on environment and atmosphere, tea-beverage list, service and its knowledge and willingness to give advice on choice. Then it is tea and its price, colour, aroma, taste and an offer of additional dishes. An interesting thing I came aross is mentioned in some coffee bars and tearooms descriptions.The object of this thesis is to assess quality of the services offered. The research supports two hypothesis I proposed. Some recommendation based on discovered weaknesses in the analytical part is made in the proposal part. I also mention one tearoom to serve as an example for other places as it came out the best in the research. I would be pleased if readers take this thesis as initial information about tea and to give them time for reflection on tearooms and coffee bars weaknesses to overcome in future in order to serve a customer better.
