Effect of Storage Temperature on the Quality Parameters of Grapevine Wines

Abstract:

Tato diplomová práce se zaměřuje na zkoumání vlivu teploty skladování na jakostní parametry révových vín. V literárním přehledu, jsou zahrnuty klíčové faktory ovlivňující kvalitu vín v závislosti na podmínkách skladování. V praktické části práce byly pozorovány tři druhy vín, skladované ve třech různých teplotách. V pravidelných intervalech byly odebírány vzorky, ve kterých byl sledován obsah antioxidační kapacity, barevné změny a obsahu celkových polyfenolů. Data byla analyzována statistickými metodami a výsledky byly vizualizovány pomocí grafů a tabulek. Práce poskytuje poznatky o tom, jak teplota skladování ovlivňuje chemické a senzorické vlastnosti vín, a nabízí doporučení pro vinaře, jak optimalizovat skladovací podmínky k dosažení nejlepší možné kvality svých produktů.

Abstract:

This thesis is focuses on the investigation of the effect of storage temperature on the quality parameters of grapevine wines. In the literature review, key factors affecting the quality of wines depending on storage conditions are included. In the practical part of the thesis, three types of wines stored at three different temperatures were observed. Samples were taken at regular intervals and monitored for antioxidant capacity, colour changes and total polyphenol content. The data were analysed using statistical methods and the results were visualised using graphs and tables. The work provides insights into how storage temperature affects the chemical and sensory properties of wines, and offers recommendations for winemakers to optimize storage conditions to achieve the best possible quality of their products.
