Mycotoxins and their metabolism in the human body
Abstract:
Cílem této bakalářské práce je seznámit se s mykotoxiny a jejich producenty. Jsou zde popsány rody Aspergillus, Penicillium a Fusarium a dané mykotoxiny (chemická struktura, výskyt v potravinách, účinky na zdraví člověka a zvířat). Významná část této práce je věnována popisu jednotlivých mykotoxinů.
Abstract:
The aim of this work is to study mycotoxins and their producers. They are described genera Aspergillus, Penicillium and Fusarium and the mycotoxins (chemical structure, occurrence in food, effects on human, and animal health). A significant part of this work is devoted to describing the metabolism of individual mycotoxins.
