Diplomová práce je zaměřena na vlastnosti pšeničného těsta a na vliv aminokyselin, které jsou do těsta přidávány za účelem změn reologických, chemických a senzorických vlastností pšeničných těst a výrobků z nich. This work is specialized in wheat- dough properties and amino acid influence, which are added to dough in order to changes rheological, chemical and sensory properties of wheat- dough and wheat- dough products.
