Modernization of vocational scgooling in education sector cook - waiter

Abstract:

ANOTACE Cílem práce je vytvořit nový výukový modul, který bude svým obsahem předkládat ucelenou podobu výuky cateringu. Výukový modul je doplněn o nová témata související s touto cateringovou činností. Žáci získají podrobné, ucelené a kompletní teoretické znalosti, které prakticky využijí činností v cateringové fiktivní firmě. Do celkového hodnocení výukového modulu cateringu je zařazen i průkaz žáka fiktivní firmy, který by mohl žák po absolvování tohoto modulu využít na trhu práce. Důležitou součástí této práce je vytvoření dotazníku, jehož úkolem bylo zjištění dosažené úrovně znalostí žáků z cateringu, kolik času je tomuto tématu věnováno ve výuce a zároveň i zájem o tuto gastronomickou oblast služeb. Výukový modul cateringu by se mohl stát přínosem nejen pro žáky, ale také i pro školu, ve které by byl realizován.

Abstract:

ANNOTATION The objective of the works is to create an educational module which will show the whole scheme of catering education. The educational module is completed with new topics relating to catering activity. Students will gain an entire, detailed, and theoretical knowledge which they utilize practically in their fictive firm. A student s certificate of fictive firm, included in the overall assessment of the catering educational module, could be used on the labour market by the student after passing the module. An important part of this work is to create a questionnaire whereby we could find out students achieved level of knowledge in catering, how much time is devoted to this topic in education, and also their interest in the field of gastronomic service. The catering educational module might become beneficial either for students or the school where the module was realized.
