Comparison of malting and non-malting varieties of winter barley in terms of yield and quality.

Abstract:

Diplomová práce demonstruje výsledky pokusu s ozimým ječmenem, který probíhal na Polní pokusné stanici Mendelovy univerzity v Žabčicích ve vegetačním období 2019/2020. Práce je rozdělena na teoretickou a praktickou část. V literární části jsou charakterizovány požadavky na podmínky prostředí u ječmene ozimého, posklizňová úprava sladovnického ječmene, anatomická stavba a chemické složení obilného zrna, významné choroby ozimého ječmene, je zhodnocena situace ječmene na trhu, perspektiva ozimého ječmene z hlediska sladování a v neposlední řadě je popsáno hodnocení jakosti zrna a hodnocení ukazatelů sladovnické jakosti. V praktické části jsou hodnoceny základní jakostní parametry u vybraných sladovnických a nesladovnických genotypů ječmene ozimého. Výsledky byly hodnoceny ze dvou stanovišť. Mezi hodnocené parametry patřil počet klasů na m2, obsah N-látek (%), podíl předního zrna (%), hmotnost tisíce zrn (g) a výnos. Výnosově dopadla nejlépe nesladovnická odrůda KWS Meridian. V obsahu N-látek všechny genotypy přesahovaly optimální mez. Podíl předního zrna byl nejvyšší u kontrolní sladovnické odrůdy KWS Ariane. Sladařským ústavem v Brně byly následně provedeny analýzy parametrů sladovnické jakosti.

Abstract:

The diploma thesis demonstrates the results of an experiment with winter barley, which took place at the Field Experimental Station of Mendel University in Žabčice during the vegetation period 2019/2020. The work is divided into theoretical and practical part. The theoretical part characterizes the environmental requirements for winter barley, post-harvest treatment of malting barley, anatomical structure and chemical composition of cereal grain, significant diseases of winter barley, evaluates the market situation of barley, the perspective of winter barley in terms of malting and last but not least it describes the evaluation of grain quality and evaluation of malting quality indicators.The practical part evaluates the basic quality parameters of selected malting and non-malting genotypes of winter barley. The results were obtained from two sites. The evaluated parameters included the number of ears per m2, the content of N-substances (%), the proportion of sieving fraction of 2,5 mm (%), the weight of a thousand grains (g) and the yield. The non-malting variety KWS Meridian showed to be the best in the terms of the yield. In the content of N-substances, all genotypes exceeded the optimal limit. The proportion of grain over 2,5 mm sieve were highest in the control malting variety KWS Ariane. The malting quality parameters were subsequently analysed by the Malting Institute in Brno.
